Ingredients for 4 people:
  • 8 spiny artichokes
  • 2 potatoes
  • 1 lemon
  • 1 dried tomato
  • 100 g. fresh cheese
  • 300 g. minced meat
  • half onion
  • 1 clove of garlic
  • Red wine
  • breadcrumbs
  • extra virgin olive oil
  • pepper
  • salt

Preparation:

To prepare the stuffed artichokes, start by cleaning the outer leaves, removing the hard parts and emptying the inside, leaving only the heart to fill. To prevent them from oxidizing, artichokes can be kept moist in water by squeezing lemon juice over them. Then peel and slice the potatoes.

In a pan, lightly fry the chopped garlic, onion and dried tomato, adding salt and pepper to taste to flavor the sauce. To give a touch of extra flavor, you can also use red wine to deglaze everything, letting the flavors mix and intensify. Let the sauce cool.

Once the sauce has cooled, you can proceed with the preparation of the artichoke filling. In a bowl, mix the minced meat with the grated fresh cheese and the previously prepared sauce. This will give the filling a rich, spicy flavor.

At this point, it is possible to fill the artichoke hearts with the meat and cheese mixture, evenly distributing the filling inside the artichokes.

For an attractive presentation, you can also set aside some cubes of cream cheese to decorate the top of the artichokes before baking them.

Arrange the stuffed artichokes and potatoes on a well-oiled or lined baking sheet and bake in a preheated oven at 200 degrees for about 40 minutes or until golden brown and cooked through. The juices of the artichoke during cooking will season the potatoes making them delicious. The scent that will spread in the kitchen will be delicious!

Once cooked, the stuffed artichokes will be ready to be served as a main course or as a side dish or appetizer.

Serve the delicious stuffed artichokes warm, paired with a good red wine with a spicy flavor and rich in tannins, such as a Montepulciano d’Abruzzo or a Vino Nobile di Montepulciano. These wines go perfectly with the tasty preparation of stuffed artichokes, further enriching the culinary experience.
