Discover the delicious heart stew recipe with onions and vinegar. A dish with a strong and ancient flavour, prepared with care and following simple steps. Perfect as a main course or side dish, this dish stands out for its intense flavors and irresistible texture.
To create this delicious recipe full of intense flavors and ancient and humble tradition, it is necessary to follow some steps carefully. We start by cutting the heart into small pieces of about 1cm. Subsequently, we chop abundant onions into large squares, while the garlic must be finely chopped.
Once the ingredients have been prepared, it’s time to start cooking. Take a saucepan with a lid and pour in a little extra virgin olive oil, then heat it slightly. Add the heart pieces and let them cook for four minutes, to allow them to develop a light golden colour. Then, add the onion pieces and cook them for 3 minutes, blending everything with two tablespoons of vinegar to give a note of acidity and an aromatic flavour. Also add the finely chopped garlic and cook for a minute, stirring gently with a wooden spoon to mix all the flavors together.
At this point, it’s time to add the white wine, which will give a fragrant note and an intense flavor to the dish. Half a teaspoon of oregano, a pinch of salt and a good pinch of pepper to adjust the flavor are essential. Mix all the ingredients well and close the saucepan with the lid. Let everything simmer for about half an hour, so that the ingredients mix perfectly and the flavors develop at their best.
This delicious dish can be enjoyed warm as a second course or as a side dish, or cold as an appetizer. To serve it, it is recommended to accompany it with slices of toasted homemade bread to enhance its texture and its unique and irresistible flavour.
robust and intense red wine is the right choice for this dish. The choice can fall on a Primitivo della Puglia or a Rosso dei Castelli Romani DOC, both characterized by the scent of forest and red fruits that combine with the strong taste of this dish.
