Ingredients for 4 people:
  • 800 g. of sheep meat
  • 1 medium onions
  • 1 carrots
  • 1 rib of celery
  • 1 cloves of garlic
  • 1 bay leaf
  • 400 g. of peeled tomatoes
  • a glass of red wine
  • two glasses of warm water
  • extra virgin olive oil
  • salt
  • pepper

Preparation:

Stew is one of the most classic dishes par excellence, perfect for a dinner with family or friends.

Browning the meat in a large saucepan with extra virgin olive oil will give the meat that unmistakable flavor and a golden crust that will make it irresistible. Cutting the meat into medium-sized pieces is important to ensure even cooking and to obtain a tastier result. After browning, remove the meat from the saucepan and set it aside.

Chopping the onions, carrots, celery rib and garlic is an important step to amalgamate all the flavors and create a tasty base for our stew. In the same saucepan in which you browned the meat, add some extra virgin olive oil and pour in the minced meat. Add the bay leaf and cook for about 5-7 minutes, until the vegetables are soft. The bay leaf will add a pleasant scent and a spicy flavor note.

Peeled tomatoes are a fundamental addition to enrich our stew with flavour. Cutting the tomatoes into pieces and adding them to the casserole together with the red wine will give it a touch of acidity and an even more intense flavour. Mix well and cook for another 5-7 minutes, until the liquid has half evaporated.

Adding the previously browned meat and two glasses of warm water will give our stew the right degree of humidity and make it even tastier. Mix well and bring to a boil.

Cooking over low heat, with the lid on, for about two hours will allow the meat to become soft and tasty, perfect for melting in your mouth. Stir occasionally and season with salt and pepper to your liking.

Serving the hot stew accompanied by toasted bread or polenta is an excellent idea for a convivial dinner. If you want to enhance the flavors of the dish, accompany it with a robust red wine such as a Cannonau di Sardegna or a Barbera del Piemonte with aromas of tannin and fresh forest bark. You just have to enjoy your Sunday stew in the company of your loved ones.
