Recipe of Cannelloni stuffed with meat

Ingredients for 8 people:
  • 24 cannelloni
  • 1000 g. of mixed minced meat
  • 800 g. of peeled tomatoes
  • 500 g. of bechamel
  • 100 g. of Parmesan cheese
  • half onion
  • 1 carrot
  • 1 stalk of celery
  • two cloves of garlic
  • half a glass of red wine
  • extra virgin olive oil
  • salt
  • pepper

Preparation:

To prepare the delicious stuffed cannelloni, the first thing to do is finely chop the onion, garlic cloves, carrot and celery stalk. Then put them to fry in a pan with a drizzle of olive oil, stirring occasionally using a wooden spoon, until they are golden and soft. To prevent the garlic from burning, add it towards the end of the browning of the sauté.

At this point, it’s time to add the ground beef to the pan and brown it until it’s nicely browned. Then, blend everything with a little red wine and let it evaporate completely.

When the wine has completely reduced, add the chopped peeled tomatoes, salt and pepper to taste. Let everything simmer for about 30 minutes, stirring occasionally. In this way, the meat filling will become creamy and tasty.

In the meantime, you can prepare the bechamel following your favorite recipe or using the one purchased ready-made . Once ready, add half of the grated Parmesan and mix well, in order to obtain a homogeneous and tasty cream.

At this point, cook the cannelloni in abundant salted water, anticipating the time indicated on the package by 3 minutes, until they are very al dente and still firm enough to allow easy filling. Drain the cannelloni and let them cool slightly.

Stuff the cannelloni with the meat filling and place them in a lightly oiled baking pan with extra virgin olive oil. Cover the cannelloni with the béchamel and sprinkle the surface with the remaining grated Parmesan.

Finally, cook the cannelloni in a preheated oven at 180°C for about 30 minutes, until the surface becomes golden and crunchy. Remove the cannelloni from the oven and let them rest for a few minutes before serving, so that the filling stabilizes and becomes even tastier.

To make this dish unforgettable, we suggest you accompany the cannelloni filled with meat with an intensely flavored red wine. A Rosso di Montalcino or a Carignano del Sulcis are excellent choices, able to enhance the intense flavors of this specialty.
