Tortiglioni alla Valenciana recipe
Ingredients for 4 people:
- 400 g. of tortillas
- 160 g. of canned tuna
- half onion
- 2 cloves of garlic
- extra virgin olive oil
- 200 g. of peeled tomatoes
- 200 g. cherry tomatoes
- 10 g. by capers in salt
- 20 g. of olives in brine
- half a glass of white wine
- 2 chillies
Preparation:
To prepare the delicious Tortiglioni alla Valenciana, it is important to follow a few essential steps. First, start by washing the capers thoroughly, soaking them in cold water for about 10 minutes. This way, the flavor and aroma of the capers will be perfectly balanced in the sauce.
Next, remove the seeds from the olives and finely chop the onion, garlic, olives, capers and chillies. In a large frying pan, sauté the chillies and onion, then add the garlic, olives and capers, continuing to stir gently to blend the flavours.
To further enhance the flavor of the sauce, blend everything with a glass of quality white wine, such as a Vermentino della Gallura, which is characterized by its fragrant and fruity note, or a Greco di Tufo from Campania, with a strong personality and determined.
Subsequently, add the tuna previously drained and crumbled with a fork directly into the pan, stirring again to mix everything. Then add the peeled tomatoes and the cherry tomatoes cut into large pieces in the pan, continuing to stir gently and adding salt to taste.
Let everything simmer for about 30 minutes, stirring occasionally to prevent the sauce from sticking to the pan. In the meantime, cook the tortiglioni in plenty of salted water, always keeping in mind the cooking time recommended on the package.
Drain the tortiglioni al dente and mix them delicately with the sauce in a large serving dish. The mix of Mediterranean flavors will make this dish perfect for a convivial lunch or dinner in the company of friends and relatives.
