Ingredients for 4 people:
  • 4 slices of pork
  • 20 g. made with flour
  • a white onion
  • 2 zucchini
  • a clove of garlic
  • 4 slices of fontina or other stringy fresh cheese
  • half a glass of white wine
  • half a teaspoon of cornstarch or flour
  • salt
  • pepper

Preparation:

For a good result of the recipe, choose slices of about one cm thick of high quality meat, also opting for white meats such as veal, chicken or turkey.

So start by flouring the slices, slicing the onions and courgettes and finely chopping the garlic. In a large frying pan, brown the slices in extra virgin olive oil until golden on both sides. Remove them from the pan and place them on a warm plate. Add a little oil to the pan and sauté the onions and sliced courgettes. Add the garlic at the end, adjust the salt and pepper.

Add the previously cooked slices to the pan and turn them over in the pan to add flavour. In a glass, mix half a teaspoon of cornstarch with the white wine and pour it into the pan while stirring. Place the slices of cheese on top of the meat, cover with a lid and leave for 3 minutes without letting the sauce dry.

Finally, serve hot by pouring the sauce with the stringy cheese over the slices.

Combine with a good fragrant red wine such as a Monica di Sardegna or a Sangiovese from Romagna to enjoy the delicate flavors of this delicious home-cooked dish.
