To make this recipe, it’s important to have the right equipment on hand. Start by pitting the olives, making sure you remove each pit carefully. To do this, you can use a special stoner or, if you prefer, a sharp knife. Next, cut the olives into bite-sized pieces to your liking.

To blend some of the olives, the flour, the onion, a pinch of salt and the wine, you can use an immersion blender or a food processor. Make sure you blend everything together until you get a smooth, lump-free consistency. If necessary, you can add a little water to make the sauce more fluid.

As for capers in salt, it is important to choose them of good quality. Take this into account when checking the amount of salt in your recipe. Leave 20 capers in water for 10 minutes to dissolve the excess salt, then remove them and rinse them in running water. Place them on a tea towel to dry.

For the meat, choose a quality cut of pork of even thickness. For a crispy, golden breading, be sure to flour it evenly and shake the meat to remove any excess flour. This way, the breading won’t stick to the pan during cooking.

Put 40 g. of flour in a large dish and pass the meat on both sides. In a large frying pan, brown the floured meat in extra virgin olive oil, pour over the dry white wine and add the blended olives, wine and flour.

Add the capers and add the unblended olives, season with salt and pepper and thicken. Stir slightly to cover the slices with the sauce and cook for a few minutes on low heat with the lid on

Finally, to best serve this delicious dish, arrange the slices on a plate and cover them with the olive and caper sauce.

To best accompany the strong flavor of this dish, we recommend pairing it with a dry and fruity white wine. A Chardonnay from the Veneto is an excellent choice for a fragrant and fruity white wine, while another option could be Verdicchio delle Marche, which is a drier white wine, but both suitable for combining with the savory fragrances of capers and olives of this delicious gastronomic experience.
