Minestrone recipe or lentil soup
Ingredients for 4 people:
- 150 g. of dried lentils
- two carrots
- two potatoes
- a dried tomato
- 2 peeled tomatoes
- 1 rib of celery
- an onion
- a courgette
- two liters of water
- extra virgin olive oil
- salt
- pepper
Preparation:
Here is the recipe for preparing a delicious lentil soup: Start by rinsing the lentils under running water and then leaving them to soak for about 30 minutes.
Continue preparing the other ingredients. Wash the carrots, peel them and cut them into cubes. Do the same with the potatoes. Finely chop the onion. Cut the celery rib into small pieces.
In a large saucepan, pour a drizzle of extra virgin olive oil and sauté the onion and garlic. When they are golden, add the celery and continue to fry for a few minutes.
Add the carrots, courgette and potatoes and mix well. Add the peeled tomatoes and the dried tomato previously cut into small pieces.
Cover everything with water and season with salt and pepper and mix well.
Cover with the lid, bring to the boil and cook over low heat for about an hour and a half or until all the ingredients are soft. Stir occasionally. With the pressure cooker leave for 50 minutes from the whistle.
When the soup is ready, turn off the heat and let it rest for a few minutes.
Serve the lentil soup hot, perhaps accompanied with toasted croutons.
