Ingredients for 4 people:
  • 800 g of fresh cuttlefish
  • 4 artichokes
  • 3 cloves of garlic
  • 4 chillies
  • A dried tomato
  • chopped parsley
  • extra virgin olive oil
  • 1/2 glass of white wine
  • salt

Preparation:

Cuttlefish with artichokes are a tasty and nutritious traditional Mediterranean dish. The softness of the cuttlefish goes perfectly with the crunchiness of the artichokes, creating a combination of flavors that will surprise you.

To prepare this dish, you will need fresh cuttlefish, artichokes, garlic, dried tomatoes, parsley, extra virgin olive oil, white wine, salt and chilli pepper. Follow these simple steps to prepare this dish with Mediterranean flavors.

Start by cleaning the cuttlefish by removing the outer skin and head with eyes. Then wash them well under running water, cut them into small pieces and set them aside. Clean the artichokes by removing the hard outer leaves, the stem and the thorns, leaving the artichoke heart clean. Cut them in half and then into thin slices. Chop the garlic, chilli pepper and dried tomato.

In a large frying pan, heat a drizzle of extra virgin olive oil and brown the garlic, chilli pepper and previously chopped dried tomato.

Add the artichokes and let them cook for about 10 minutes, turning them often so that they brown evenly.

Add the cuttlefish and continue to cook for another 10-15 minutes, stirring frequently. Deglaze with the white wine and let it evaporate. Salt to taste and sprinkle with chopped parsley. Cover the pan with a lid and cook for another 5 minutes, until the cuttlefish is cooked to perfection.

Serve the cuttlefish with artichokes piping hot on toasted bread accompanied by a good glass of chilled white wine. I suggest a good Nuragus from Cagliari or a Frascati Superiore from Lazio which, with their dry almond notes, are perfect for combining with the savory and marine flavors of this dish.
