Ingredients for 4 people:
  • 4 slices of beef or pork
  • Flour
  • a white onion
  • 2 carrots
  • a glass of Vernaccia di Oristano or dry white wine
  • extra virgin olive oil

Preparation:

To prepare this delicious dish, start by passing the soft slices of meat in the flour, then cook them over high heat in a pan with extra virgin olive oil for a few minutes, turning them gently until they are golden brown. Once ready, remove them from the pan and arrange them on a plate to keep them warm.

In the meantime, dedicate yourself to the vegetables: cut the carrots and onion into thin strips, ready to give an irresistible taste to your dish. In the same pan used for the slices, add a drizzle of extra virgin olive oil and cook the carrots first, seasoning with salt, curry and pepper, and blend with the fine Vernaccia di Oristano. Let it cook until the carrots are soft and tasty.

At this point, add the onion to the carrots and let them cook until they are golden brown, releasing an enveloping aroma. Pour half a glass of Vernaccia di Oristano and add the previously cooked slices of meat, stirring gently to cover them with the delicious sauce. Cook for a few minutes over low heat, covering with the lid to let the flavors blend. If you don’t have Vernaccia di Oristano, opt for a good, very fragrant dry white wine.

Before serving, let the dish rest to ensure that the flavors blend harmoniously. Then, enjoy it warm, accompanying it with a fresh, refined dry white wine such as a Sauvignon Veneto or a Greco di Tufo from Campania.
