Ingredients for 4 people:
  • 4 spiny artichokes
  • a lemon
  • an onion
  • a clove of garlic
  • a dried tomato
  • extra virgin olive oil
  • curry
  • salt
  • pepper

Preparation:

To prepare the artichoke casserole recipe, start by carefully cleaning the artichokes, removing all the outer leaves and the leathery part. Once cleaned, divide them in half and place them in the saucepan with the heart facing upwards, ready to be seasoned.

Subsequently, wash the sun-dried tomato from the salt under running water and chop it very finely.

Prepare a delicious sauce by mincing the onion, garlic and sun-dried tomato. Mix the mince with oil, lemon juice, curry and a pinch of salt and pepper, bearing in mind the particular flavor of the dried tomato.

Pour the sauce over the artichokes and cook everything covered over low heat for half an hour, allowing the flavors to blend. Then let the artichokes cool inside the saucepan, so that they can absorb all the aromas in an optimal way.

When they are ready, bring the artichokes to the table cold, to be enjoyed as a delicious side dish or appetizer. You can accompany this tasty preparation with a side dish of fresh cherry tomatoes and a good red wine with an intense flavor, such as a Monica di Sardegna with aromas of spices and aromatic herbs, or a Sicilian Syrah with spicy notes of black pepper, which will go perfectly with to this dish.
