Malloreddus recipe with sheep ragout
Ingredients for 4 people:
- 400 g. of malloreddus or Sardinian dumplings
- 500 g of sheep meat
- 400 g of peeled tomatoes
- 1 onion
- 1 carrot
- 1 stalk of celery
- 1 cloves of garlic
- a bay leaf
- 1 glass of red wine
- extra virgin olive oil
- salt
- pepper
- grated Parmigiano Reggiano or aged Sardinian pecorino
Preparation:
A typical dish of the Sardinian tradition, characterized by a unique and unmistakable taste. A delicacy that represents one of the gastronomic treasures of Sardinia
Finely chop the onion, carrot and celery. Also chop the garlic cloves. Cut the meat finely into 1 cm cubes.
In a large frying pan, fitted with a lid, fry the onion, carrot, celery and garlic in a little extra virgin olive oil until golden brown.
Add the chopped meat and brown over high heat for a few minutes.
Deglaze with the red wine and let the alcohol evaporate.
Add the peeled tomatoes and the glass of red wine, salt and pepper to taste. The lady at the butcher’s shop who sold me the mutton made such a point of not forgetting to add the bay leaf. Mix well and bring to a boil.
Lower the heat and cook over very low heat for at least 2 hours, stirring occasionally. If the sauce dries too much, add a little red wine.
When the ragù is ready, taste and season with salt and pepper to taste.
In the meantime, cook the malloreddus in abundant salted water following the instructions on the package.
Drain the malloreddus al dente and transfer it to the pan with the ragù and sauté. Mix well and cook for a few minutes.
To best serve the dish and if the diners like it, the dish can be completed with a generous sprinkling of grated Parmigiano Reggiano or aged Sardinian pecorino.
To complete these Malloreddus with sheep ragout in the traditional way and to enhance the ancient flavors of this specialty, we recommend pairing it with an intensely flavored red wine. We suggest a Cannonau from Sardinia or a Carignano from Sulcis, with their bouquet of scents of Mediterranean scrub and myrtle berries, which marry lovingly with the intense flavors of this dish.
