Tortiglioni recipe with tomato sauce
Ingredients for 4 people:
- Tortiglioni 400 g
- 400 g. of fresh tomatoes or peeled tomatoes
- Half onion
- A clove of garlic
- Extra virgin olive oil
- tender leaves of fresh basil if you are in season
- Parmesan cheese 50 g.
- salt
Preparation:
Preparing this delicious dish is incredibly quick and easy. Despite its simplicity, the goodness of the dish is guaranteed thanks to the use of easily available natural ingredients.
To start, cut fresh or peeled tomatoes into small pieces. Next, put the extra virgin olive oil in a large pan and sauté the onion and garlic, being careful not to let them burn. If necessary, you can add a drop of water to prevent this from happening.
Add the previously cut tomatoes and the salt, stirring occasionally and leaving to simmer for about 20 minutes. It is important that the tomatoes remain slightly undercooked. Add the hand-cut basil into large pieces towards the end of cooking. If you prefer, you can also chop a few parsley leaves and add them at the end of cooking together with the basil.
Cook the tortiglioni al dente in plenty of salted water, drain them well and then pour them into a serving dish. Add the previously prepared tomato sauce and mix well so that it penetrates inside the tortiglioni. Serve still hot. If desired, each diner can add grated Parmesan cheese to their plate for an extra touch of flavour.
To enhance the gastronomic experience of Tortiglioni with tomato sauce and beans, it is advisable to choose an intense and decisive red wine, such as a Chianti from Tuscany or a Carignano del Sulcis. These wines release aromas of red fruits, which marry happily with the taste of Tortiglioni with tomato sauce.
