Spicy pasta and beans recipe

Ingredients for 8 people:
  • 200 g of thimble-type pasta
  • 100 g. of diced sweet bacon
  • 120 g. of dried borlotti beans or a can of boiled borlotti beans
  • half onion
  • a clove of garlic
  • 2 chillies
  • a dried tomato
  • 400 g. of peeled tomatoes
  • salt
  • pepper
  • waterfall

Preparation:

Spicy pasta and beans is a dish of poor origins but tasty and substantial, perfect for cold winter days or for a dinner with friends.

The recipe calls for the use of beans, pasta, bacon, peeled tomato and chilli pepper, combined in a skilful combination of flavors and aromas.

The particularity of the spicy version lies in the addition of chilli pepper, which gives a touch of intense and spicy flavour.

For its preparation, it is important to carefully follow the instructions for cooking the beans, which are the main ingredient of this dish. First, cook the beans in a liter of water in the pressure cooker for 40 minutes after the whistle.

Prepare the liquid cooking sauce for the pasta by first sautéing the bacon, then adding the onion and finally the garlic. Pour in the peeled tomatoes and bring to the boil. Blend half of the beans with 500 gr. of cooking water, the dried tomato and the chilli pepper. Add the smoothie to the mixture being cooked and also add the remaining whole beans. Add 200 g. of cooking water with salt and pepper to taste and bring to a boil. If you use canned beans, add 300 gr. of water.

Cook the thimbles in the boiling liquid sauce and turn off the heat just before the cooking time for the pasta to keep the pasta al dente. Leave to rest for a few minutes to allow the flavors to absorb well and serve while still piping hot.
