Ingredients for 8 people:
  • 1 kg. of clams
  • 280 g. of toasted Sardinian fregola (35 g per person)
  • 2 cloves of garlic
  • 2 chillies
  • parsley
  • 800 g. peeled
  • dried tomato
  • extra virgin olive oil
  • 1.6 liters (200 g of water per person)
  • salt

Preparation:

Fregola is the typical Sardinian pasta produced with durum wheat semolina masterfully worked with water and salt. The processing is completed with the roasting which gives it a unique flavor.

Start by preparing the clams by cooking them slightly over low heat in a saucepan until they open. Once opened, collect and filter the cooking liquid and set it aside for further seasoning. Separate the shells of the clams and eliminate half of them to make consumption and the taste experience more pleasant.
In another fairly large saucepan with a thick bottom and a lid, sauté the garlic and chilli pepper with a little extra virgin olive oil. In this pan you will then complete the cooking of all the ingredients.
Break up the peeled tomatoes and finely chop the dried tomatoes and then pour them into the pan where you sautéed the garlic and chilli pepper. Leave to simmer with the lid on until the peeled tomatoes fall apart.
Add the clams to the pan and cook them briefly so that they absorb the flavors of the other ingredients.
Pour the water into the pan, together with the liquid cooking filtrate from the clams, and bring everything to the boil.
Adjust the salt, bearing in mind that the sun-dried tomato and the cooking water from the clams are already salty.
Finally, pour the fregola into the pan and let it cook until it is al dente, stirring occasionally to prevent it from thickening to the bottom.
At the end of cooking, add the finely chopped fresh parsley to the fregola and mix well.

Serve the Fregola con Arselle still piping hot, accompanying it with a fresh and fragrant white wine such as a Vermentino di Sardegna or a Pinot Bianco Veneto, to enhance the marine fragrances of the dish.
