Ingredients for 1 person:
  • 1 lobster for each person
  • 6 tablespoons of extra virgin olive oil
  • juice of one lemon
  • half a teaspoon of curry
  • a pinch of salt
  • sprinkle of white pepper

Preparation:

Start by blanching the lobster in a pan of salted water for about 5 minutes, until it turns bright red. Drain the lobster and let it cool slightly.
Once cooled, place the lobster on a serving plate and divide it into two parts lengthwise.
Prepare the sauce by mixing the extra virgin olive oil in a bowl, lemon juice, curry powder and a pinch of salt. Mix well until you obtain a smooth sauce.
Pour the sauce over the two lobster halves inside the shell, making sure to cover all the flesh well.
Put the seasoned lobster in the fridge and leave to marinate for at least 2 hours, so that the flavors blend well.
Before serving, take the lobster out of the refrigerator and leave it at room temperature for a few minutes. Serve the seasoned lobster cold, accompanying it with a good fresh white wine such as a Vermentino from Gallura or a Muller Thurgau from South Tyrol, which go well with the refined taste of the lobster.
