Ingredients for 4 people:
  • half chicken
  • half onion
  • a clove of garlic
  • a carrot
  • 50 g. vinegar
  • 100 g. Red wine
  • 1 dried tomato
  • 15 olives in brine
  • 10 g. of capers in vinegar
  • extra virgin olive oil
  • salt
  • pepper

Preparation:

This delicious chicken cacciatore recipe with vegetables is a simple and tasty way to prepare a traditional dish of Italian cuisine. Start by buying half a whole chicken and cutting it into large pieces, so as to obtain uniform cooking.

Subsequently, take a large saucepan with a lid and brown the chicken in the extra virgin olive oil until golden brown on the surface. Meanwhile, chop the dried tomato, onion, carrot and garlic and lightly fry them with the chicken, stirring gently to prevent it from sticking to the bottom of the pan.

Then add the pitted olives, capers, vinegar, red wine to cover the meat and season with salt and pepper to taste.

Simmer over low heat with the lid on for about an hour, stirring occasionally, so that the chicken softens and absorbs all the flavors of the vegetables and ingredients. At this point, your delicious dish is ready to be enjoyed!

To harmoniously complete this tasty dish, I suggest you accompany it with an aromatic and intense red wine such as a Monica di Sardegna or a Montepulciano d’Abruzzo, which with their spicy aromas will best enhance the flavor of the chicken cacciatore with the vegetables.

Enjoy your meal!
