Ingredients for 4 people:
  • 8 slices of homemade bread
  • 2 mozzarella or 200 gr. of soft cheese
  • 100 g. of diced porcini
  • extra virgin olive oil
  • 1 clove of garlic
  • parsley
  • Origan
  • salt
  • pepper

Preparation:

Preheat the oven to 220 degrees to make sure it is hot for the preparation of the delicious Tostadas with porcini mushrooms and stracchino. Take the slices of homemade bread, preferably thick and rustic, and place them carefully on a baking sheet lined with baking paper, so that they are ready to be toasted.

Brown the slices of bread on both sides to make them crunchy and irresistible. This can take a few minutes, so be patient and turn the slices carefully to ensure they are evenly browned on both sides.

In the meantime, prepare the fresh porcini mushrooms, cleaning them carefully and cutting them into small pieces. Finely chop the fresh stracchino cheese, which will be the star of this delicious recipe.

In a pan, fry the diced mushrooms with a generous drizzle of extra virgin olive oil, minced garlic, oregano, salt and pepper. Let the mushrooms cook slowly, releasing all their flavor and aromas, until they are soft and golden brown.

Once the slices of bread are golden and crunchy, you can add the cooked mushrooms and the minced stracchino cheese to the croutons, distributing them evenly on each slice. Season with a pinch of salt and pepper to taste, to bring out the flavors of the mushrooms and cheese.

Put the tostadas in the preheated oven at 220 degrees for about 10 minutes, or until the stracchino cheese has completely melted, creating a delicious harmony of flavors and textures. As soon as they are ready, take them out of the oven and serve them still hot, to better savor all the ingredients.

To accompany these delicious Tostadas with porcini mushrooms and stracchino, I recommend pairing them with a fragrant and lively white wine, such as a Gewurztraminer del Trentino or a Sauvignon Veneto. These wines marry perfectly with the spicy fragrances of porcini mushrooms and will sublimely complete the gustatory experience of this delicacy.
