spaghetti-amatriciana
Ingredients for 4 people:
  • spaghetti 400 gr.
  • guanciale or bacon 100gr.
  • extra virgin olive oil
  • half onion
  • peeled tomatoes or fresh tomatoes of 400 gr.
  • a clove of garlic
  • dry white wine
  • parmesan cheese 50 gr.
  • a chilli
  • pepper
  • salt

Preparation:

To prepare a tasty and tasty spaghetti amatriciana dish, it is important to follow the recipe carefully. Amatriciana sauce is a traditional dish of Italian cuisine, originally from the city of Amatrice.

To begin, cut the bacon or bacon into thin strips and fry it in extra virgin olive oil together with the whole chilli pepper, the finely chopped onion and garlic. It is important to be careful not to burn the onion and garlic, so blend everything with white wine every now and then.

Once the sautéed vegetables are golden brown, you can remove the chilli pepper and add the chopped fresh tomatoes. Let the sauce simmer for at least 40 minutes, stirring occasionally. The sauce should be thick and tasty. Then add the Parmesan and mix well to melt it.

Meanwhile, cook the spaghetti in plenty of salted water until al dente. Drain well and transfer them to a serving dish. Pour over the prepared sauce and mix well to distribute it evenly.

For an extra touch, you can add freshly ground pepper and grated Parmesan to taste. Serve the spaghetti amatriciana piping hot. Pair with a good perfumed red wine that does not dominate the taste of pasta all’amatriciana such as a Monica di Sardegna or a red Castelli Romani DOC.
