Ingredients for 2 people:

  • extra virgin olive oil
  • 10 g. of balsamic vinegar
  • 50 g. of white wine
  • 10 g. of flour or cornstarch

Preparation:

To prepare tasty escalopes in agro sauce, follow these simple steps. Initially, melt a knob of butter in a pan over low heat. We recommend using a quality butter, perhaps organic, for an even tastier result. When the butter has completely melted, add a little flour or cornstarch and mix well to obtain a smooth, lump-free cream. This operation is very important to guarantee an enveloping sauce with an intense flavour.

Once the cream is obtained, it’s time to add the vinegar and white wine. We recommend using balsamic vinegar of Modena, recognized for its high quality and intense flavour. White wine, on the other hand, can be chosen according to your preferences, perhaps opting for a Vermentino or a Pinot Grigio. Mix well and cook for a few minutes, until the mixture thickens and reaches the right consistency.

Now it’s time to prepare the scallops. Coat them in flour and fry them in very hot extra virgin olive oil, in order to obtain a uniform and crunchy browning. Add a pinch of salt and a pinch of pepper to flavor the scallops and make them even tastier.

Finally, add the escalopes to the previously prepared white wine and vinegar sauce. Let everything rest for about half an hour, so that the escalopes can absorb all the aromas and flavors of the sauce. Serve hot and enjoy this dish with an intense and enveloping flavour, accompanying it with side dishes of seasonal vegetables or baked potatoes.
