Ingredients for 4 people:
  • one kg. of chicken breast
  • 2 red or yellow peppers
  • 500 g. of whole yogurt
  • a white onion
  • a clove of garlic
  • 3 chillies
  • quarter teaspoon of spicy curry
  • a glass of white wine
  • salt

Preparation:

This is a spicy chicken dish inspired by Indian cuisine.

Put half a glass of white wine, a pepper, half the onion, the three peppers, a clove of garlic into the blender glass and blend with the hand blender until a smooth cream is formed.

Dose the spiciness with the number of chillies and the amount of spicy curry. If you have regular curry, increase the amount of chillies. The spiciness will be greater by blending the peppers with the seeds. If you put unblended peppers, I suggest eliminating the seeds that could cause digestion problems.

Choose the color of the peppers also based on the visual effect you want to give to the dish.

Arrange the chicken breast on a cutting board and cut it into cubes of about 2 cm. For the sautéed mixture, chop the other pepper and the other half of the onion into small pieces.

Put the extra virgin olive oil in a deep casserole and brown the diced chicken and then add the pepper and onion chopped into small pieces. Deglaze with the white wine.

Pour the blended mixture with the remaining white wine and bring to the boil over low heat. Keep cooking for 15 minutes.

Add the yoghurt and spicy curry and mix well. Season with salt and bring to the boil for 15 minutes on a low heat, stirring well from time to time.

Turn off the stove and let it rest for at least an hour to let it take on the flavour. If you can, prepare this dish from the day before and reheat it before serving.

Serve warm.

It also goes well served with white rice, like basmati, cooked separately, which will be seasoned with chicken sauce.

To maximize the spicy, aromatic and slightly sweet flavor of the curry, I suggest you accompany it with a dry and full-bodied white wine, such as a Nuragus di Cagliari which goes well with this dish for the fruity taste of almonds and juniper.
