Ingredients for 4 people:
  • 8 artichokes
  • 500 g. of fresh sausage
  • 50 g. of breadcrumbs
  • a dried tomato
  • half a clove of garlic
  • 30 g. of grated Parmesan cheese
  • an egg
  • extra virgin olive oil
  • salt
  • pepper

Preparation:

To prepare this delicious recipe, start by carefully cleaning 8 artichokes from the thorns and stems. Leave them whole so that you can fill them with the sausage mixture that you will prepare later. To prevent the artichokes from oxidizing and turning black, I suggest you put them in water and lemon while you prepare the other ingredients. This will not only keep them fresh, but will also add a touch of sweetness thanks to the lemon dip.

To ensure that the flavors blend well, the garlic and sun-dried tomato, after having been washed off the salt, must be chopped very finely. Then take the fresh sausage meat and work it into small pieces after having freed it from the outer casing. Mix it with an egg, breadcrumbs, grated Parmesan cheese, extra virgin olive oil, chopped dried tomatoes, finely chopped garlic, salt and pepper.

Once the dough is prepared, carefully fill the artichoke hearts and sprinkle breadcrumbs or Parmesan cheese on top. Arrange the stuffed artichokes on a baking sheet lined with baking paper on the bottom, so that they do not stick during cooking. Bake in the preheated oven at 200°C for about 30 minutes, making sure that they are well cooked inside and golden on the surface.

Once ready, you can serve these delicious stuffed artichokes with a good red wine with an intense flavor, such as a Tuscan Chianti or a Sicilian Nero D’avola, which will go perfectly with this tasty preparation.
