Ingredients for 4 people:
  • 400 g. of fresh trofie
  • one kg octopus.
  • spicy curry
  • 5 chillies
  • White wine
  • salt

Preparation:

The spicy fresh pasta trofie with curry and octopus are a unique dish that combines intense and tasty flavours. The octopus sauce with chilli and curry gives a spicy touch that goes perfectly with the tenderness of the octopus and the unique aroma of the curry. The sauce takes some time to make, but the end result is totally worth it. If you have purchased a large octopus, keep it in the freezer a week before using it to make it soft by weakening the consistency.

The first step is to fry the small octopus in a pan with a little olive oil. You can cut it into smaller pieces to make it easier to handle. Meanwhile, finely chop 5 chillies, removing the seeds to reduce the intensity of the heat and prevent digestion problems. Also chop the garlic finely and add it to the pan together with the octopus. Shade everything with white wine to prevent the garlic from burning and to add a touch of flavor.

Add the fresh cherry tomatoes cut into very small pieces, the spicy curry and season with salt. If your curry isn’t spicy, add a few more chillies into the stir-fry, in addition to the non-spicy curry. Leave to simmer with the lid on for at least 30 minutes, stirring occasionally, so that the flavors blend and the sauce thickens.

In the meantime, boil plenty of salted water and cook the fresh trofie for a few minutes, following the instructions on the package. Drain them with a slotted spoon and toss them in the pan where you prepared the octopus sauce. Mix the pasta with the hot sauce to mix the flavors well.

To complete this delicious and satisfying meal based on fresh trofie with octopus, it is suggested to accompany it with a fresh and aromatic white wine, such as Pignoletto from Emilia or sparkling Garda from Veneto. Their freshness and cheerfulness go perfectly with the complex flavors of the spicy octopus sauce, creating a truly excellent gustatory combination.
