Ingredients for 4 people:
  • half kg. of mixed beef and pork minced meat
  • 2 eggs
  • 2 boiled eggs
  • a pound of stringy fresh cheese
  • 60 g. of breadcrumbs
  • a pound of mortadella
  • 2 yellow peppers
  • two white onions
  • a clove of garlic
  • a glass of white wine
  • salt
  • pepper
  • salt

Preparation:

To prepare this delicious meatloaf, we start by blending one of the two peppers with the garlic and the wine, obtaining a creamy sauce. Next, we proceed by finely slicing the onions, carrot and celery. In a large bowl, mix the minced meat with two eggs and the breadcrumbs, obtaining a homogeneous mixture. We take a sheet of baking paper and spread the meat on it, giving it a rectangular shape.

We continue by placing the slices of mortadella, the fresh cheese and the whole hard-boiled eggs on the meat, in order to create a tasty filling. With the help of the baking paper, roll up the meat on itself, compacting the meatloaf well to prevent it from opening during cooking. To make sure the meatloaf keeps its shape, we tie it with kitchen twine.

In a saucepan, put some extra virgin olive oil and brown the meatloaf on all sides, in order to seal the meat and retain the juices inside. Once browned, we remove it from the saucepan and put it on a plate.

In the same pan, add a little extra virgin olive oil and lightly fry the pepper and onion, releasing their aromas. Then pour in the previously blended part of the pepper and cook everything for about 5 minutes, mixing the flavors well.

At this point, put the meatloaf back in the pan and cook it over low heat for 20 minutes, turning it from time to time to make sure it cooks evenly on all sides. Finally, we serve the meatloaf in slices, with the gravy on top to enhance its delicious flavor.

Serve still hot in a serving dish and present it in slices. Pour the onion and pepper sauce obtained during cooking to flavor all the parts. This dish is perfect to accompany with a full-bodied red wine, such as a Sicilian Nero d’Avola or a Monica from Sardinia, to enhance the fragrance of the pepper and the sweetness of the onion.
