Ingredients for 2 people:
  • 2 eggs
  • 300 g. of zucchini
  • 30 g. of breadcrumbs
  • 30 g. of Parmesan cheese
  • 20 g. of butter
  • salt
  • pepper

Preparation:

To prepare a nutritious dish of zucchini omelette, clean the zucchini by scraping the skin off and then blanch them for a few minutes. Steam cooking in a pressure cooker will preserve the flavor and nutritional properties of the courgettes. Leave them about 5 minutes after the whistle and then let them cool and cut them into cubes.

In a large bowl, mix the eggs well with a pinch of salt and a sprinkle of pepper, until you get a smooth mixture. Thicken by mixing with the breadcrumbs, the Parmesan cheese and the diced courgettes.

Melt the butter in a non-stick pan, being careful not to let it burn. Pour the egg and zucchini mixture into the pan and spread it out and level it with a spatula.

Let the omelette cook over medium-low heat for a few minutes until you see that the surface in contact with the pan is golden, use a spatula to turn everything over and complete the browning on the other side. If you feel good and lucky, turn the omelette in the air on the fly.

Once the omelette is cooked and golden on both sides, transfer it to a serving plate and serve hot. Zucchini omelette is a versatile and nutritious dish, perfect for a light dinner or a quick lunch. You can accompany it with a tomato salad and a few slices of toasted homemade bread.
