Ingredients for 1 person:
  • 100 g. by leavened dough
  • 2 ripe gravy tomatoes or peeled tomatoes or tomato puree
  • half mozzarella
  • a few tender basil leaves
  • extra virgin olive oil

Preparation:

To prepare a perfect Margherita pizza, it is essential to pay close attention to the preparation of the leavened dough. You can follow the instructions in this link or buy ready-made pasta from a bakery or supermarket. Once you have obtained the leavened dough, roll it out on a sheet of floured baking paper and place it on a baking tray, using a rolling pin or your hands, being careful not to tear the dough. Let the dough rest for 20 minutes before preparing the other ingredients, in order to allow it to relax and regain some leavening, so that the pizza will be softer and lighter on the palate.

Once the dough has been spread out on the pan, distribute the peeled or peeled tomatoes finely chopped over the leavened dough, preferably using fresh and well-ripened tomatoes which will certainly make the pizza tastier. Add the oregano and salt, mixing well to distribute the ingredients evenly. For the mozzarella, if you want an authentic taste, use the buffalo one, coarsely chopping it with a sharp knife.

Bake the pizza already hot at 220 degrees and let it cook for about 16 minutes. After this time, distribute the chopped mozzarella on the surface of the pizza and put it back in the oven for another 5 minutes, until the mozzarella is completely melted and stringy.

Remove the pizza from the oven and let it rest for a few minutes before serving. Homemade Margherita pizza is a simple but very tasty dish, perfect for an informal dinner with friends or for an evening with the family. You can accompany it with a fresh green salad or with a few slices of raw ham.

To enhance the aromas and flavours, you can pair your Margherita pizza with a fresh and intense white wine, such as a perfumed Muller Thurgau from South Tyrol or a Chardonnay from the Veneto with an aromatic and lively bouquet.
