Preparation:

If you are looking for a delicious dish to prepare, fried rabbit could be for you! When you buy the rabbit from the butcher, keep in mind that cutting it into pieces could also crush the bones, with the risk of finding bone splinters while tasting it. However, if you decide to buy a whole rabbit, after having washed and dried it thoroughly and removed the head and any offal, if you feel comfortable, take the time to cut the rabbit into small pieces along the joints with a kitchen knife.

To give a touch of freshness to the dish, wash a lemon well and grate all the zest. In a large dish, prepare a mixture of flour and semolina or flour and cornmeal, the grated rind and pass the rabbit pieces over it, covering all surfaces of the meat well. If you notice pieces that are not covered, repeat the operation.

In a large frying pan, pour the frying oil and heat well. Check the temperature by dipping a small piece and make sure it fries well. With the hot oil, place the pieces of rabbit in the pan and leave them there for about ten minutes. When the bottom surface is well browned, turn them all over and cook for another 10 minutes, until the surface looks well browned.

To best present the fried rabbit, you can opt for an original and captivating presentation, using a serving dish decorated with lemon leaves. In this way, you will give a touch of freshness to the dish and make the experience of tasting it even more pleasant.

To prepare the dish, simply wash the lemon leaves thoroughly and arrange them on the bottom of the serving dish to create a homogeneous bed. Subsequently, after having fried the rabbit meat in a large pan with boiling oil, drain it with a slotted spoon and lay it on absorbent kitchen paper for a minute to remove the excess oil.

Finally, to complete the preparation, the absorbent paper can be removed very delicately, so that the pieces of meat fit perfectly on the lemon leaves. At this point, the dish is ready to be enjoyed in all its goodness, appreciating the crunchy fried meat and the fresh lemon aroma. In this way, a captivating and refined presentation of the dish will be obtained, which will surely leave all guests speechless. To harmoniously complete this tasty dish, combine the fried rabbit with a well-structured and intense red wine, such as a Sicilian Nero d’Avola or a Monica from Sardinia.
