Ingredients for 2 people:
  • 2 slices of pork 1 cm thick
  • Flour
  • a lemon
  • extra virgin olive oil
  • salt
  • pepper
  • salt

Preparation:

Put the pork slices in a bowl and add the juice of one half of the lemon. Leave to marinate for an hour, so that the meat absorbs the fresh lemon flavour.
Drain the pork slices from the marinade and remove the excess lemon juice, to avoid it being too acidic.
Take the second half of the lemon and cut a thin slice to use it as a garnish and press the rest of the lemon to obtain the fresh juice that you will use in cooking.

In a large frying pan, heat the extra virgin olive oil over medium-high heat.
Lightly flour the pork slices, covering them gently but evenly with flour on both sides. This will help to seal the juices inside and to obtain a golden crust during cooking.
Put the floured pork slices in the hot oil and let them brown for a few minutes on both sides, until they are well cooked and have the golden crust.
Add the juice from the second half of the lemon to the pork slices in the pan, along with a pinch of salt and pepper to taste. Leave to cook for a few minutes so that the sauce thickens slightly and blends well with the meat.
Once ready, serve the pork escalopes hot, garnishing each one with a previously cut lemon slice. This garnish will not only give a touch of freshness to the dish, but will also make the presentation more appealing.

As an ideal pairing, we advise you to choose a fresh and fragrant white wine, such as a young Vermentino della Gallura or a Gewurztraminer, whose intense flavors are linked to the scent of lemon.
