Bulgur and Quinoa recipe with cabbage

Ingredients for 4 people:
  • a cabbage of 400 gr
  • 120 of bulgur and quinoa blend
  • an onion
  • 10 g. of vinegar
  • 60 g. of white wine
  • extra virgin olive oil
  • salt

Bulgur and Quinoa are two whole grains rich in nutritional properties beneficial to our body. Bulgur, obtained from durum wheat, is rich in fibre, B vitamins and mineral salts. Quinoa, on the other hand, is a source of high quality protein, antioxidants and essential fatty acids. Ideal for preparing light and tasty dishes.

The quick and easy recipe to prepare, perfect for a light but nutritious dinner. To start, you need to wash and thinly slice the cabbage. In a non-stick pan, you can then fry the previously thinly sliced onion in a little oil, then add the cabbage and brown it together with the onion for a few minutes. To flavor everything, you can add a little white wine and vinegar, adjusting the salt and pepper to your liking. Cover the pot with the lid and cook over low heat until the cabbage becomes soft.

Meanwhile, in a separate container, you can boil the bulgur and quinoa in salted water for about 15-20 minutes, until the cereals are well cooked. Once ready, they can be drained and seasoned with the previously prepared cabbage sauce. Mix well and serve hot.

To enhance the tart and tasty fragrances of the dish, it is advisable to combine it with a very fresh and dry white wine, such as a Greco di Tufo or a Nuragus di Cagliari. These wines are characterized by their savory hints of almonds and juniper, which go perfectly with the flavors of cabbage and cereals.
