Risotto recipe with peas and cooked ham
Ingredients for 4 people:
- 240 g. of basmati rice
- 50 g. of butter
- extra virgin olive oil
- half a white onion
- 200 g. of very fine peas
- 200 g. of diced cooked ham
- 400 g. of broth also stock cube
- 40 g. of Parmesan cheese
- salt
Preparation:
Making risotto is an art form that requires patience and skill, but it also requires the right amount of care and commitment every step of the way. With the right ingredients, it can be a delicious and easy-to-prepare meal. Risotto with peas and cooked ham is a classic Italian dish that is sure to please. The first step in making this dish is to prepare a good sauté that will give a delicate but characteristic flavor to your creamy risotto. Buy only a large slice of cooked ham that you will cut into cubes and a bag of very fine frozen peas.
In the meantime, prepare a small pot of broth with 400 gr. of water and a datum. If you have time, prepare it in advance with beef and chicken, water, a potato, carrots, salt and a dried tomato.
Start by chopping an onion and adding it to a pan with butter or extra virgin olive oil. Fry until the onion is golden. Add the diced ham and then the peas. Finally, add the basmati rice which absorbs a lot of liquid or risotto rice and start mixing slowly by adding a ladleful of hot broth. Stir continuously until cooked, adding more stock as the rice dries out.

For a perfect combination of flavours, combine a white wine with an intense aroma such as a perfumed Müller-Thurgau or a Chardonnay, but which does not dominate the delicate flavor of the risotto.
