Preparing a caramel pudding requires few ingredients and a few simple steps, but it’s always better to give a few more tips to make sure you get a perfect result.

First of all, it is important to choose quality ingredients: prefer fresh eggs, whole milk and good quality sugar.

Also, it’s best to use a thick-bottomed pan to prevent the pudding from sticking to the bottom and burning.

Start by making the caramel: in a saucepan, put 150g sugar and 50ml water and bring to a boil over medium heat, stirring constantly until the sugar has completely dissolved.

Continue to cook over medium heat, without stirring, until the caramel is golden brown.

Once the caramel has been prepared, pour it immediately, distributing it evenly on the bottom of the molds or single-portion bowls: the caramel will solidify quickly, forming a crunchy and tasty layer on the surface of the pudding.

In a separate bowl, beat the eggs with the cornstarch and vanillin until you get a smooth and homogeneous mixture. When preparing the egg and cornstarch mixture, it is important to mix well to avoid the formation of lumps. Also, you can add a pinch of salt to enhance the flavor of the pudding.
