Ingredients for 4 people:
  • 250 g. of 00 flour
  • 2 eggs
  • 30 g. of sugar
  • 200 g. of milk
  • 30 g. of peanut oil or butter
  • a sachet of baking powder
  • a teaspoon of vinegar
  • a pinch of salt

Preparation:

The pancake is one of the most loved breakfasts in the world, easy to prepare and customizable in many ways. Its soft texture and versatility make it perfect for every palate, from the sweet tooth to the most health-conscious. Here is the basic recipe for making perfect pancakes.

Start the preparation by separating the yolks from the albumen. In a large bowl, mix the egg yolks, sugar, milk and yeast, a teaspoon of vinegar, a pinch of salt and the peanut oil or butter with a whisk. Slowly add the flour and mix until you obtain a homogeneous, soft and fluid dough without lumps.

To have fluffy and soft pancakes, whisk the egg whites well and mix them gently by adding the previous mixture. Let the whole mixture rest for at least half an hour.

In a pan with a thick bottom and grease with a very light veil of peanut oil or a good oil for frying and heat it. You can do this with a sheet of kitchen paper greased with oil. Take a ladle or large serving spoon and pour a portion into the pan heated over medium heat.

Brown the surface in about a minute, then turn the pancake with a flat ladle or kitchen spatula and finish browning on the second side.

Remove from the pan and proceed with all the dough. Stack the pancakes on top of each other in a dish to keep them warm or keep them in a preheated hole.

Serve the pancakes still warm by pouring the maple syrup or Nutella over them.
