Quinoa recipe with rice, chickpeas and cabbage
Ingredients for 4 people:
- a cabbage of 500 gr
- 40 g. of quinoa
- 120 g. of rice
- an onion
- a jar of chickpeas
- 10 g. vinegar
- White wine
- extra virgin olive oil
- salt

Here is the complete recipe to prepare a delicious rice dish with quinoa, chickpeas and cabbage that will surely leave your palate satisfied.
To start, take a cabbage and wash it thoroughly under running water. Slice it into thin slices and keep it aside. Prepare a frying pan and put a little oil, fry the previously thinly sliced onion, then add the cabbage and fry it with the onion for a couple of minutes. At this point, add the white wine and vinegar, add the drained chickpeas and season with salt. Cover the pan with the lid and cook over low heat until the cabbage softens.
Meanwhile, in a separate container, boil the rice and quinoa. Once the quinoa and rice are cooked, drain them and dress them with the previously prepared cabbage sauce. Mix the ingredients well so that all the flavors blend.
To enhance the flavors of the vegetables, I suggest you accompany this dish with a fresh and fragrant white wine. An excellent choice could be a Vermentino della Gallura, a wine with a floral fragrance of almonds, or a Greco di Tufo, with its aromatic scent of peaches and apricots.
