Tortiglioni recipe with fresh sausage and broccoli
Ingredients for 8 people:
- 250 g. of fresh sausage
- 400 g. of broccoli
- 400 g. of tortillas
- Half onion
- A clove of garlic
- Extra virgin olive oil
- White wine
- Salt and pepper
Preparation:
If you want to prepare a delicious plate of Tortiglioni with fresh sausage and broccoli, here’s how to proceed. Start by chopping the fresh sausage into small pieces and put it in a pan with extra virgin olive oil. Fry it over medium-high heat for a few minutes, so that it browns well on all sides. Be sure to turn it often with a wooden spoon to prevent it from sticking to the pan.
Once the sausage has browned, add the chopped onion and continue cooking over medium-low heat. The onion will have to cook until it is almost golden. It will take about 5-7 minutes.
At this point, add the minced garlic and brown it together with the onion and sausage for a couple of minutes. Be sure to turn the garlic often to avoid burning.
To blend everything, add a little white wine. It will only take a small amount of wine, about half a cup, to keep the garlic from burning and to give the sausage and onion a more intense flavor.
Let the alcohol in the wine evaporate for a couple of minutes, then add the broccoli cut into small pieces and mix everything well. Cover the pan with a lid and cook over medium-low heat for about 10-12 minutes, until the broccoli is soft.
In the meantime, cook the pasta al dente in plenty of salted water, always keeping in mind the cooking time recommended on the package.
Once ready, drain the tortiglioni al dente and mix them delicately with the sauce in a large serving dish. The combination of flavors will make this dish perfect for a convivial lunch or dinner in the company of friends and relatives.
To complete the dish, we recommend serving the pasta hot and accompanying it with a glass of quality white wine, such as a Chardonnay from Veneto or a Greco di Tufo from Campania, to bring out the intense flavors of the sausage and broccoli.
